**I attempted this recipe first with corn tortillas, I had difficulties with them cracking when I tried to fold them, I personally found more success in using flour. *You'll find many recipes call for different cuts of meats. It's said that a blend of a more fatty meat along with a leaner roast style will give you the best succulent texture. However, when slow cooking you're going to get a pretty tender meat in general so I say use what you got and enjoy the fabulous flavors that all these spices and peppers bring!
