Although this is no way seemingly "authentic" it was super easy and enjoyable! Easy peasy Spicy peanut Thai noodles
Servings: 4 Prep time: 10 minutes Cook time: 15 minutes Ingredients: 4 cups dry egg noodles 2 large carrot, shredded 1 yellow onion, diced 1 pint snap peas 1 can baby corn, rinsed 1 red pepper, Julianne 2 tbsp vegetable oil Salt & pepper 1/2 cup chopped peanuts Sauce- 1/3 cup peanut butter 1/2 cup soy sauce 1/4 cup honey 4 tbsp sriracha sauce Directions: 1. Cook noodles al dente as directed on packaging. Whisk sauce ingredients together in a bowl and set aside. 2. In a large skillet heat your oil to a medium high heat. When oil is ready add your vegetables and sauté until onions are translucent and carrots are soft. 3. Next remove from heat, and add in your pasta, peanuts, and drizzle with sauce, stir continuously until noodles are well coated. *optional garnish with minced peanuts and parsley. And as always SERVE HOT AND ENJOY!!
