This is a great nutty but subtle pesto, the cashews give it a nice creamy taste. prep time: 4 minutes
Ingredients:
Instructions: 1. In a food processor combine cashews, cheese, and peeled garlic. Allow to process until finely ground. 2. Next add the basil, lemon juice and salt. Turn on the food processor and gradually pour in the olive oil. Once combined. Blend in a bit more olive oil if desired, to achieve a more liquid texture. Stores for about 1 week in the refrigerator or freeze up to six months.
